Chocolate is one of those things that I gave up when I dropped sugar from my diet. Sure, there are chocolates with artifical sweeteners, but that’s a bit like jumping from the frying pan into the fire.
I still sometimes get a hankering for chocolate and may have finally found a low-carb, no sugar way to address that yearning.
Chocolate Banana Pudding
4 bananas
1/3 c. almond milk
3-4 tbsp Dutch process cocoa powder, depending on taste
1/2 tsp sea salt
Run all ingredients through a food processor until smooth. Garnish with cacao nibs.
If you’re not an almond milk fan — I’ve been avoiding it because it contains Carrageenan — you can swap in skim milk. I’d suspect water would do in a pinch, too.
