Okay, so this was a total (and not totally successful) experiment. I’m starting from the concept of the classic French blueberry custard, but trying to avoid the metabolically disruptive flour and sugar. So, stage one was a simple omelet with blueberries (and a pinch of salt). I served it over a spinach salad with white beans, strawberries and a roasted garlic/balsamic vinegarette.
It’s not bad, but is definitely missing an element. I’m thinking ginger. Maybe other spices. I want to keep it on the sweet side, but may need to try a savory element, too. Pondering…. I really want to make this work.
