a different kind of pancake

I saw this recipe floating around Facebook as a meme, and frankly was suspicious. But it’s amazing. This version is relatively sweet (at least for me), but I think it could be made into a savory dish, too, with the addition of some herbs and ginger — and with a different salsa.

Pancakes — gluten free, no added sugar, makes one portion

Ingredients: 1 ripe banana, 1 egg, 1.5 tblsp finely ground flax seed (I added the flax seed to the original recipe, so skip it if you prefer).

  • Mash the banana and whisk in the egg. Stir in flax meal.
  • Pour onto lightly oiled, hot pan so 2-inch pancakes form. Cook each side 30-45 seconds.

I topped the pancakes with a light blueberry salsa — a quarter cup of fresh blueberries mashed with 1 tblsp lemon juice.

Post Script Note: I think the flax seed meal cut the banana’s sweetness. The addition of rosemary and sauteed mushrooms might make a really nice savory option…. could be topped with caramelized onions or even a crab / fish / lobster salad.
