I don’t eat potatoes. At least, I avoid potatoes. Potatoes convert to sugar to easily and make me sleepy about ten minutes after I eat them. So I don’t eat them. But I like clam chowder, and I’m trying to create a version of clam chowder that’s got a lower glycemic profile. This isn’t it, but it’s getting closer.
Experimental Clam Chowder
2 medium onions
3 medium carrots
1 medium turnip
3 ups shredded cabbage
12 oz chopped clams with juice
12 oz clam juice
16 oz cooked white beans
8 cups water
Avocado for garnish
Sweat onions, carrots and turnip until onions turn gold. Add cabbage and soften before adding clam juice and water. Add half the white beans whole and crush the other half before adding. Simmer until carrots and turnip are soft. Turn off heat and add clams. Garnish each serving with one-quarter to one-half an avocado.
The turnip is a little cloying and the next iteration will leave it out.
