Garbanzo Salad

This is a great side dish or can, with the addition of tempeh (or another protein) be made into a main course.


Garbanzo Salad

  • 1 cup cooked garbanzos (canned is great)
  • Half of a cucumber, diced
  • 12 cherry tomatoes, quartered
  • 1 small onion, diced

Dressing:  crush 1 clove garlic into 2 tbsp olive oil and 2 tsp lemon juice, salt and pepper, and chiffonade of 6 basil leaves (mint works great, too);  whisk until emulsified.
